This Knife started life in France by Thiers-Issard / Sabatier as a commercial Chef\'s knife blank. They sat in a basement until the blanks were sold to Lee Valley Tools of Canada in the 1990\'s as a blank. Lee Valley Tools acquired the 5/16\" thick x 18-1/2\" blanks, did the grinding, sharpening and hardening then added the Rosewood handles with the brass rivets.
Eventually being sold by Lee Valley Tools this Vintage 18.5\" Commercial Butcher\'s/ Slaughterhouse Breaking Knife labeled \"Peasant\" by Thiers-Issard / Sabatier became the Lee Valley Tools 4-Star, Elephant as etched into the knifes High Carbon Steel Blade. With a total length of 18.5\", a cutting edge of 13\" and the Rosewood handles at 5.5\" with a total weight of 2.25lbs. it is surely a very useful and very collectable tool.
The condition of this knife appears gently used with a good sharp cutting edge and some patina with the carbon stains and a few scratches in the steel and handles. There is no sign of abuse only love.
